TAIPEI (TVBS News) — A technological university in Taichung has partnered with a biotech firm to produce plant-based foods, including vegetarian drumsticks and popcorn chicken, using mycoprotein and 3D printing, reports say.

The products have gained recognition for their authentic taste and texture, as confirmed by Hungkuang University. This groundbreaking technology enables users to create meals with the push of a button.

 

Hungkuang University President Huang Yueh-guey highlighted the increasing popularity of plant-based foods in response to growing environmental awareness, opening up new opportunities in the vegetarian market.

The university emphasizes the health and environmental benefits of mycoprotein consumption, promoting both gut health and a reduction in greenhouse gas emissions, aligning with health and sustainability objectives.

Transforming mycelium into 'meat' strands to replicate the taste and texture of real chicken meat proved to be a complex process, according to Huang. Nevertheless, extensive research and the application of 3D digital technology successfully addressed this challenge.
