TAIPEI (TVBS News) — Kinmen Kaoliang Liquor Inc. (金門酒廠實業股份有限公司) dominates Taiwan's white liquor market with nearly 90% market share in 2025, establishing the spirit as the island's most iconic alcoholic beverage. Produced on Kinmen, a group of Taiwan-administered islands located just off the coast of China, the liquor holds rich historical and emotional significance for local residents. The spirit serves as both a staple on dining tables and a cultural symbol across Taiwan.

The distillery's origins trace to the Battle of Guningtou (古寧頭戰役), a 1949 conflict in which Nationalist forces repelled a Communist invasion attempt. Gen. Hu Lien (胡璉), commander of the Kinmen Defense Command (金門防衛司令部), observed the military's annual need to purchase thousands of liquor bottles from Taiwan proper. To address this supply issue and generate revenue, he proposed establishing a state-run distillery and persuaded private distiller Ye Hua-cheng (葉華成) to help found Kinmen Kaoliang Liquor Inc. in 1952.

 

Gen. Hu implemented policies such as exchanging one pound of sorghum for one pound of rice, encouraging residents to cultivate sorghum. This initiative laid the foundation for Kinmen's thriving liquor culture. The region's sweet water, dry climate, and clean air create ideal conditions for producing drought-resistant red sorghum. The distillery uses water from a Ming (明) Dynasty-era spring, filtered through granite and rich in minerals.

Kinmen Kaoliang Liquor Inc. differentiates its products based on raw materials, aging time, or blending methods, though it has not disclosed official grading standards. The liquor offers two distinct drinking experiences: chilled and warm. Chilled kaoliang does not freeze and becomes smoother and more aromatic when served cold, making it ideal for summer. Warming the liquor allows aldehydes and methanol to evaporate, softening the taste and enhancing the aroma for winter enjoyment. ◼
